Packing Up!

As hectic as graduation week was, this week was just as insane for both of us. After my family left on Monday I had two days to move out of my apartment and drive 8 hours to Arizona for my little brother’s high school graduation. Then, yesterday I woke up at 6am to drive back to San Diego to meet Devin to get everything together for the trip. Meanwhile, Devin has been spending the week in San Diego doing all of the things she and I didn’t have time to get done before I left while also moving out of the apartment and bringing her things up to her family’s house in Laguna to store for the summer. Needless to say, we are ecstatic to be on the road and away from the chaos.

Grocery shopping last night proved to be quick and easy all thanks to my amazing Grandmother who bought me a surplus of vegan food while I was home for the graduation festivities. Not to mention all of the leftovers my mother gave us from the BBQ. We have above and beyond what we would have been able to afford including beans, vegan chili, tofurkey sausages, soy “ground beef”, vegan cheeses, tofu, Portobello mushrooms, broccoli, cauliflower, celery, carrots, radishes, bell pepper, grapes, cherries, strawberries, honeydew, cucumber, tomatoes, whole wheat pasta, homemade vegan French bread, and tortillas. She even gave us canned tomatoes for our homemade salsa and marinara! All we had to buy last night then was a ton of oats for our homemade trail mix and oatmeal, peanut butter, hummus, water, tortilla chips, and brown rice.  

The most expensive thing we bought last night was all the makings for our trail mix (chopped banana chips, chopped almonds, cranberries, raisins, dried apricot, sunflower seeds, and pumpkin seeds; totaling roughly $11 excluding the expense for the pumpkin and sunflower seeds because those were also included in everything my grandma bought for us). This made a TON of trail mix so we are pretty confident that it will last us most of the trip.




Not having enough energy to do our usual cooking routine and knowing we will be staying with my brother in Salt Lake for a couple days after Vegas, we opted to save some of the cooking for Utah.

Packing and so forth...

We have had a very busy day getting ready for the trip and although we were hoping to write a bit more tonight about our preparation and packing, we are far too tired to write a full post tonight. Hopefully tomorrow while on the road to Vegas we will be able to write a post to share with you all. Overall though we are excited and looking forward to this grand adventure. First things first though, time to get some rest!

Veggie Blog

Christina and I have been working to connect her veggie food blog to our blog - but until then I just wanted to add the link so you can look at some of the cooking we've been doing this semester. We have recently gone vegan so some of the recipes of the dishes we made will have to be tweaked...but most of the recipes are still focused on healthy eating.

Graduation!

Well...we are officially graduated!!!! 




So what comes next???
I'll tell you what comes next...stress, anxiety, a weekend full of highs and lows, lots and lots of cleaning and packing, tearful goodbyes and joyful celebrations and way too much drinking...we have entered into what some might call the "Real World" and here we are feeling overwhelmed and not quite sure what to do with ourselves. This road trip has kept us going through the past few weeks of final projects and final exams, and this road trip is what is going to get us through the initial fear of what comes next after graduation.

So to answer that question again, What comes next after graduation??? I'll tell you what comes next - THE MOST EPIC ROAD TRIP EVER!
We only have a few more days before the trip and although we are in different places, Christina and I have been in touch discussing all of our plans, making lists and planning meals for the next 3 weeks.
We leave Monday morning and the first stop - VEGAS BABY!!! We can't wait to start posting pictures so all of you can follow us on our grand adventure!

Raking in the cash...

A quick update on our savings jar and craigslist adventures...We re-posted a bunch of items that we have been trying to sell on craigslist this morning and have already sold some more items! We sold Christina's coffee table for $15 and Devin sold a wire shelf unit (that we had been using as our nightstand) for $15 too. A TV stand that Devin got for free from her aunt we also sold for a whopping $20! As you can see, the jar is getting pretty full and it's getting to be a bit of a struggle to fit anymore money in... only 15 more days 'til we get to relieve our dollars from claustrophobia.




Getting rid of stuff and making money at the same - we love craigslist!!

We have also been working on making some camping reservations. We realized that we are making reservations a little late in the game - Yosemite campsites fill up super early! - but we are exploring options of possibly camping outside the park and biking in. We're hoping that this will save us some money on the campsites anyways...

The Map


This map is what keeps us going. It has been hanging on our wall ever since we began planning the trip. The last few weeks have been pretty hectic with the end of school, finals, projects, papers, and upcoming graduation celebrations. It never ceases to cheer us up though when we look at the map and dream about all of the amazing things that are going to take place on this trip. Only 18 more days until we are on the road!

Craigslist Crazy!

We cannot believe how quickly time is passing - our road trip is just around the corner! We have been extremely busy with school and end of the year projects but we just finished our last undergraduate college classes yesterday (YAY!) and we are excited to continue the planning of this epic adventure!



Last week we went craigslist crazy and posted a bunch of items we are trying to sell since we are moving and trying to make some extra cash for the road trip.

So far we have sold:
Set of shelves $25
Lamp $15
Futon Chair $45
Floor lamp we stole from the trash $3 
Toaster Oven $20
Shoe Rack $5
Ottomans $20

Grand Total: $133

Selling most of our possessions is also helping with our efforts to be more minimalistic. The shelves that we sold have been sitting under Devin's bed the entire school year. The ottomans in our room became a surface to pile more junk on...we accumulate so much stuff that we don't need or end up not using. Being able to sell all the things we don't use has been a great way to raise money for our trip but it also has been liberating.
